Last Updated Apr 7, 2020 5:45:13 AM ET
Tiger sauce is a sweet and sour condiment that adds zest to chicken wings, seafood and beef. Baltimore is reputed to be the home of this unique concoction that locals favor as a sauce for barbecued beef sandwiches.
The product is marketed under names such as Try Me Original Tiger Sauce. A homemade version is prepared by combining vinegar, Worcestershire sauce and marsala wine with exotic and spicy ingredients, including tamarind and hot red pickled peppers. Anchovies and horseradish are added for additional flavor. Pectin thickens this mock tiger sauce recipe, which belongs in the category of Asian-inspired condiments, such as Teriyaki, satay and fish sauce.
