Lemon meringue pie can be refrigerated, but the dessert does not keep well in the freezer. The pie can be refrigerated for two to three days.
The pie should be placed in the refrigerator within two hours of baking. To keep the pie fresh, wrap it loosely in plastic wrap or aluminum foil. The topping for the pie is made from ingredients such as egg whites, cream of tartar and cornstarch, and it may not maintain the same consistency once it is frozen. The same may be true for the pie's lemon filling, which consists of ingredients such as egg yolks and cornstarch. Egg whites last for two to four days if refrigerated, and egg yolks stay fresh for one to two days when refrigerated.
