Substitutes for white balsamic vinegar include white wine vinegar or rice wine vinegar. White balsamic vinegar does not change the color of other ingredients in recipes, such as prawns or scallops, so one should not substitute it for red vinegar or standard balsamic vinegar varieties.
White balsamic vinegar has a lightly sweet flavor and is often used for making pickles, marinate meats and add flavor to sauces and vinaigrettes. Most types of white balsamic vinegar have a sour flavor and they last for about two years when unopened. The vinegar originates from Italy, where it is matured in wooden barrels for a couple of years.
