To cook beef tongue in a pressure cooker, place whole washed tongue into the pressure cooker, add just enough water to cover the tongue, bring to pressure and cook for about 30 minutes. A few teaspoons of pickling spice can be put into the cooking liquid for added flavor.

Trim off the tongue root, blood vessels and exterior fat. Remove any glands, base bones and base muscles. Wash the tongue in cold water.
In a pressure cooker, cover tongue with water and cook for 30 minutes.
After cooking, cool tongue in cold water, remove gristle and skin, and slice.
