Should You Marinate Fish Overnight?

It is not recommended that fish be marinated overnight in the refrigerator. Marinating fish for too long causes the fish to become mushy and fall apart.
Fish should marinate for 30 minutes to an hour in the refrigerator. The fish should be placed in a storage bag or airtight covered container when marinating.
Once the fish is done marinating, the sauce should not be used on other foods or the cooked fish unless it is boiled. The marinade contains bacteria from the fish, and boiling it kills the harmful bacteria.
Foil and aluminum containers should not be used when marinating fish or other types of meat. Using tin and foil could result in a reaction that can spoil the food.
