Mustard greens contain beta carotene, a potent antioxidant, and a significant amount of iron. This vegetable also contains calcium for lactose-intolerant individuals. A 1/2 cup serving of cooked mustard greens contains 11 calories, 1.4 grams of fiber, 1.6 grams of protein and 1.5 grams of carbohydrates, as well as folic acid and potassium. Mustard greens are very easy to cultivate. Because mustard is a fast-growing vegetable, it is a healthy complement to summer salads.
