An average lemon weighs approximately 3 to 4 ounces, depending on the size. The rind, or peel, usually measures one-quarter to three-eighths of an inch thick. Most lemon varieties range in size from 2 to 5 inches in length.
One lemon produces approximately 1.334 ounces of juice and 3 teaspoons of lemon zest. Some popular, commercially grown lemon varieties include "Bearss," "Eureka" and "Lisbon." Several factors affect the size and weight of lemons, including soil conditions, tree spacing and the use of fertilizers, pesticides and fungicides. Citrus producers, such as Sunkist Growers Inc., ship lemons based on size, including small, medium and large, in cartons or in 2-, 3- or 5-pound bags.
