According to the Food Network, 1/3 to 1/2 pound of potatoes should be allocated per person when preparing mashed potatoes. When serving roasted potatoes, 2 1/2 pounds of potatoes should be allocated per person.

Depending on their size, potatoes can weigh between 2.3 to almost 7 ounces each. The average potato used for preparing side dishes or baking is between 2.7 and 3.5 ounces. According to the Northern Plains Potato Growers Association, the average person in the United States consumes about 140 pounds of potatoes per year. The average European consumes double that amount. The potato was not introduced to Europe until 1537. From there, it made its way to the United States.
