According to Harvard Medical School, cashews and other nuts are a valuable source of protein in the human diet. The fat in cashews is mostly healthy fats, such as monounsaturated and polyunsaturated fats, which can assist in lowering LDL cholesterol and triglyceride levels to protect against diabetes and cardiovascular disease. Cashews provide plenty of magnesium, but may not provide as much Vitamin E as almonds. No matter the type, it is healthiest to eat nuts unsalted. Cashews are actually seeds that come from a cashew apple, which are often found in Vietnam, Brazil, Mozambique and India.
