Fresh, uncooked sausage can be stored in the refrigerator for up to two days. Once cooked, sausage can be stored for an additional four days. Hard, dry sausages can be stored in their whole state for six weeks in a pantry or indefinitely in the refrigerator.
Once a hard, dry sausage is opened, it can be stored in the refrigerator for three weeks. Semi-dry sausages like summer sausage can be stored in the refrigerator unopened for three weeks. Once opened, they can be stored in the refrigerator for an additional three weeks. All sausages can be stored in the freezer for up to two months.
