An unopened jar of salsa stays fresh in the refrigerator for one to two months. The salsa stays fresh for the same amount of time once the jar has been opened.

Homemade salsa stays fresh for five to seven days when refrigerated. If the salsa changes to a maroon color instead of its normal bright red shade, it should be discarded immediately. Salsa should also be thrown out if it begins to thicken and develop a foul odor, or if the sauce develops mold. To ensure the salsa stays fresh while stored, the sauce should go in an airtight container.
