What Happens If You Eat Too Many Blueberries?

Researchers at Kansas State University have found that eating too many antioxidant-rich foods, such as blueberries, causes stress on the body. Antioxidants are usually beneficial because they stabilize free radicals, which help cells age.

Free radicals are released by the body as part of its normal functions. Each of these particles lacks an electron, and a free radical takes a replacement from a cell. This process ages cells prematurely. However, an over-abundance of antioxidants is harmful to the body. A small number of free radicals are needed in order for the immune system to work properly, and an excessive amount of antioxidants removes too many. However, a healthy amount of antioxidant-rich foods has not been determined.
