Sliced carrots and red cabbage are good substitutes for beets when cooking. Tomatoes and radishes are a good replacement in salads and raw foods.
The beet is classified as a root vegetable that is orange to dark purple in color. This vegetable has a leafy top which is also edible.
Beets should be washed well and peeled before cooking. This food is commonly boiled, steamed or baked.
Golden beets can also be used a substitute for this food. Beets pair well with bacon, cheese, butter, potatoes, lemon, smoked fish, sour cream and cucumbers.
Beets which have smooth skin and brightly-colored crisp leaves are best for cooking.
