Gobo sushi is sushi containing a slender, long root known as burdock root. Burdock root is a Japanese plant that has a taste similar to a bitter carrot.
The word “sushi” refers to the type of vinegared rice used in this cuisine. Sushi does not contain only raw fish. Cooked fish, tofu, vegetables and egg are also used in sushi. There are several types of sushi. For example, maki sushi refers to a roll of vegetables or fish surrounded by seaweed and rice. Temaki sushi are rolls similar to maki, but instead of having the rice on the outside, the temaki has the seaweed on the outside. Nigiri sushi contains a small amount of rice with fish or vegetables on top.
