Curry has a unique flavor that is deep and earthy from the blend of savory spices, but also has certain brightness due to the sweet spices in it. It is actually a mix of spices that includes cumin, coriander, turmeric, pepper, mustard, ginger, clove, cardamom, bay leaf and fenugreek.
The level of heat in a curry powder is determined by what type of and how much pepper is in it. Hot curries usually have red chillies or other hot peppers, while mild curries may have black pepper or ginger. Curry powder is an all-purpose seasoning that is commonly used in soups, stews, sauces, marinades, meat and vegetables.
