How Do You Cook a Spoon Roast in the Oven?
To cook a spoon roast in the oven, place the spoon roast in a roasting pan and then into a cold oven, turn the oven up to 450 degrees Fahrenheit and cook for 10 minutes. Reduce the heat to 325 F and continue cooking the roast 20 minutes for every pound of meat. This is the high/low technique.
In addition to the high/low technique, there is the slow-roast technique. The slow-roast technique entails roasting the meat at about 275 F to 350 F for roughly 33 to 36 minutes per pound.
With each technique, a rare, medium or well done state can be achieved by pulling the roast out of the oven when its internal temperature reaches 125 F, 130 F or 145 F to 160 F, respectively. Insert your meat thermometer halfway into the thickest part of the meat without hitting the bone. You may have to tweak the cooking times according to your oven’s temperature and your personal preference.
A seasoned dry rub is a standard component in most spoon roast recipes. Recurring ingredients in dry rubs for spoon roast include cracked pepper, onion, and garlic and one or two herbs, such as thyme and oregano. Some rubs contain a little olive oil to bind the ingredients and help them adhere to the roast. After packing the rub onto the roast, let it set for 10 to 15 minutes to soak up the flavors.
When the roast is done, transfer it to a clean platter and allow it to rest uncovered. Detailed roasting instructions are available at Wegmans.com
