Beaufort, Comte, Emmental, Jarlsberg, Raclette, or Swiss are all good substitutes for Gruyere cheese. These cheeses share a similar flavor profile with Gruyere and may sometimes be cheaper or easier to find in grocery stores.
Gruyere is a popular Swiss cheese made from whole cow milk. Before being shipped to food retailers, Gruyere must be aged for at least six months. Gruyere is a firm cheese with a slightly nutty flavor and a creamy texture. Unlike other Swiss cheeses, Gruyere has only a few holes. Gruyere melts very quickly, so it is often used in souffle, gratin, and fondue recipes.
