Lady Fingers are small sponge cake cookies that are shaped like long fingers. The cookies are especially light due to their egg content and small amount of flour in proportion to sugar. In France, Lady Fingers are known as “cat’s tongue cookies” and are eaten in sandwich form with nougat in the center. Lady Finger cookies are also used to make tiramisu, an Italian dessert that includes custard, brandy or rum, espresso and cocoa.
