What Is the Shelf Life of an Unrefrigerated Hard-Boiled Egg?

A hard boiled egg can be kept safely at room temperature for approximately two hours. Refrigerate any hard boiled eggs that will not be eaten immediately; doing so will prevent spoilage and potential food-borne illness.

Hard boiled eggs left in an unbroken shell will keep for up to seven days in the refrigerator. Eggs that have been peeled will keep for up to five days in the refrigerator. Do not freeze hard boiled eggs; doing so reduces their shelf life by damaging their cellular structure.

Discard any hard boiled eggs with an unpleasant smell. Scent is an important first clue in determining whether an egg is spoiled. A green ring around a hard boiled egg’s yolk is not a sign of spoilage; eggs with a green ring are safe to eat as long as they do not exhibit other signs of spoilage.
