Paula Deen puts a unique twist on tuna salad in her Tuna and Apple Sandwiches recipe. For this recipe, mix two 6-ounce cans of albacore tuna, 1/2 of an apple, diced, 1/4 cup of mayonnaise and 1/8 teaspoon of salt in a bowl. When done, spread the mixture on sandwich bread or serve over a bed of lettuce.
Paula Deen uses a different tuna salad as the base for her Tuna Burgers. To make this recipe, first combine 2 6-ounce cans of solid white tuna with 1/2 cup of breadcrumbs and 2 large eggs that have been lightly beaten. Mix everything together, then add 1/2 cup each of finely chopped onion and celery, 1 clove of minced garlic, 1 1/2 teaspoons of horseradish and 1 tablespoon of fresh lemon juice. Add 1/4 teaspoon of black pepper and, if desired, 1 tablespoon of chopped pimento. Mix all of the ingredients together and after everything is well-incorporated, shape into four patties.
Cook the tuna patties in a non-stick skillet with 1 tablespoon of olive oil, covered over medium heat until they are golden brown. Flip them carefully and cook the other side for five minutes. Finish cooking the burgers in a medium oven until cooked through and serve on a toasted bun with desired toppings.
