Mole poblano is widely considered as the national dish of Mexico. Made with approximately 20 different ingredients, the mole poblano dish came from the mountain city of Puebla.
Mole poblano is made with turkey that is covered a thick, rich sauce called mole. What makes this sauce even richer is that it is infused with chocolate, which gives the sauce a distinctively dark color. The flavor of the chocolate, however, does not dominate the dish. Rather, the chocolate serves to counteract the spiciness of the chili, which is a common ingredient in mole poblano. This dish is commonly served during the Cinco de Mayo celebration in Mexican communities in the United States, as well as in the city of Puebla in Mexico.
