Cook a pot roast in the oven for one hour per pound of meat at 275 degrees Fahrenheit. A 3-pound roast cooks for three hours, while a 6-pound roast cooks for six hours.
Prior to adding the meat to the oven, pan sear it briefly over high heat to give the edges a brown color. This caramelizes the meat and ensures a better flavor. Deglaze the pan by whisking either wine or some broth in the pan until all the burned bits are dissolved, then add the deglazed mixture to the roast pan or Dutch oven to help keep the meat moist and flavorful.
