Flounder has a mild flavor and a delicate texture. Yellowtail flounder has a mild sweet taste and a firm texture. Flounder is capable of being cooked by baking, broiling, frying or sautéing it, while raw flounder ranges in color from tan to pink to snow white when cooked.
Flounder is a species of flatfish that are part of the taxonomic order Pleuronectiade, which means "sideswimmer." Flounders are born with an eye on either side of their body, but as they grow up, one eye migrates to the other side. Flatfish have the ability to either be "right-eyed" or "left-eyed." The majority of flounder caught for commercial use are "right-eyed." Yellowtail flounder are typically caught off the Atlantic coast.
