It is safe to eat expired properly canned goods as long as the integrity of the can is intact and the can was stored in a cool, dry place. However, over time, the quality of the taste and texture of the food may deteriorate.
Food-borne botulism can occur when food is preserved without using proper canning techniques. Botulism can cause paralysis or even death if it is not treated immediately. To ensure food safety, do not consume foods from cans with leaks, dents or bulges. If the can appears damaged in any way, do not eat food from the damaged container. Do not consume foods that are discolored, contain mold or have an odor. Similarly, it may be dangerous to consume food that spurts liquid or foam when the can is opened.
