Collard greens are among the same family of plants that includes cabbage, kale and broccoli. Although cooked collard greens are most commonly associated with Southern cuisine, collard greens are a favorite of healthy food eaters because they are high in key vitamins K, A and C. They are also high in calcium. Eating collard greens is said to be good for the cardiovascular system, and it may lower the chances of developing cancer.
