What's a corvina in South Florida? I did some research online and it seems to be a general name for a fish from the scaienidae family. And that could be Atlantic Croaker, Black Drum, Red Drum, Kingfish, Spot, Spotted or Speckled Sea Trout, Weakfish, White Sea Bass, Orangemouth Corvina, Yellowfin Corvina, Golden Corvina, Shortfin Corvina, etc., etc.
What I was looking for was fish. Corvina or Saltwater Drum has 200 varieties or so, caught in the Atlantic Ocean. This is prime time in Florida for fresh Corvina. It’s a fish that grows to 30 pounds and lives on the bottom. Caught by trawling and sometimes by line. It is a fish whose flesh is pink and flakey, but cooks to a nice white filet.

Corvina is spectacular food fish with a global reputation. Corvina represents the prime table fish of many countries. Because of its incredible characteristics, Corvina may be one of the most under sung Florida fare. The Corvina resemble Redfish, fillets like Grouper, and taste like Snapper – for a fraction of the cost.
One of the waitresses asked me what a corvina was and I told her it was a west coast version of a sea trout or weakfish. My boss corrected me, ahem, and said that corvina run from Florida to NC. I certainly have never heard of this. If anyone has ever heard of corvina on the east coast, or a comparable fish with a similar name, please let me know.
