After searching for some recipes, I happened across Smitten Kitchen’s Chewy Amaretti Cookies. Naturally flourless, they seemed the perfect recipe to use up my leftover almond paste. I noticed a couple of things were different when I made this recipe. For one, the cookie dough was REALLY thin.
