Almond Cookies with Amaretto. slightly adapted from Easy Gourmet by Stephanie Le, p. 218 makes 18 cookies 140 g (1 cup) all-purpose flour ½ tsp baking soda ¾ tsp baking powder ½ tsp fine sea salt 114 g (½ cup) unsalted butter, at room temperature100 g (½ cup) granulated sugar110 g (½ cup) light muscovado sugar115 g (1 cup) almond flour1 egg (European size M; U.S. size L)

The recipe is simple and the ingredients are eggs, flour, sugar, baking powder and vanilla.

Instructions. For the Almond Amaretto Pound Cake: Preheat oven to 325°F (163°C). Generously grease a 10-inch (12-cup) bundt pan, being sure to coat all of the nooks and crannies.


Transfer to oven and bake until cookies are pale golden and begin to crack slightly, about 15 minutes. Reduce oven temperature to 200 degrees. Leave oven door ajar to release some of the heat. Let cookies stand in oven until completely dry and crisp, 25 to 30 minutes more.


Roll the dough into 1-inch balls, roll into the powdered sugar and place on the prepared baking sheets, 1 inch apart. Flatten the cookies slightly, then let them stand at room temperature for 15 minutes, while your oven is preheating. Bake the amaretti cookies until the tops are cracked and the cookies are golden brown, about 20 minutes.


Directions. In a large bowl, cream butter and sugar. Beat in egg and extract. Combine the flour, baking soda and salt; gradually add to creamed mixture.
