Hi Mash, US$ are all you will need on St Maarten - most market stall holders for example on the French side would expect you to use US$ (after all many visitors, I'll avoid saying most are from the US) but they will quite often welcome payment in Euros as it saves them having to change it over if they need to pay French Tax/bills etc in Euros..
