Honey does not have a single chemical formula, as it is composed of a number of compounds. Fructose, a type of carbohydrate, is the single largest ingredient of honey, comprising approximately 38.2 percent of the substance.
Glucose, a monosaccharide carbohydrate similar to fructose, is the second most prevalent compound in honey, at roughly 31 percent of the compound. 17 percent of honey is made up of water. Beyond these three components, the remaining 15 percent of honey is made up of complex carbohydrates like sucrose and maltose, proteins, amino acids, enzymes, vitamins like riboflavin, niacin and folic acid. It also contains minerals in trace amounts as diverse as calcium, zinc and chromium. An antioxidant group known as flavonoids is unique to honey.
