Asparagus, peas and garlic are just a few examples of vegetables that can be grown during the winter season. Broad beans, onions and spinach can also be sown during late fall.
While leeks, sprouts and parsnips are popular with those who are planting new vegetables during early or mid-fall, spring onions, shallots and chard are all hardy winter vegetables suitable for planting later in the season. Use of a temperature-controlled greenhouse can allow for carrots, pok choi and lettuce to be grown throughout the winter. Vegetables that have been sown in an outside plot may also benefit from a fleece or perforated polythene cover that insulates them from the cold.
