To use a loukoumades machine like the Lil' Orbits Semi-Automatic Model 800 with the LK1200 loukoumades hopper, fill the fryer portion with oil, and set the temperature to 375 degrees Fahrenheit. Prepare the mix, and add it to the automatic hopper. Turn on the hopper drive to pump out the loukoumades. Use the server utensil to turn, and when finished cooking, take the loukoumades out with the fry screen.
Loukoumades are a crisp dessert served with cinnamon and honey syrup. To make the batter, combine 1 envelope of active dry yeast, 1/2 cup lukewarm milk and 2 cups of warm water. Mix until the yeast dissolves. Slowly add 3 1/4 cups of sifted, all-purpose flour and a pinch of salt. Mix until it becomes a thick batter.
Cover the bowl, and let the dough rise for 1 1/2 hours in a warm environment. The batter should double in size. When ready, fry in the loukoumades machine until puffy, golden brown and crispy.
Make the syrup for the loukoumades while the dough is rising. Heat 3/4 cups of honey, 3 whole cloves and 2 cinnamon sticks in 2 cups of water. Allow the mixture to boil, and then reduce to a simmer. Continue to simmer for 10 to 12 minutes. When the mixture becomes a syrup, remove it from the heat. Apply it to the fried dough, and complete the dessert by dusting it with cinnamon.
