Begin by heating 2 1/2 cups of half-and-half in a medium saucepan on medium heat. Warm until the liquid is very hot but not boiling. Stir often, and remove from heat once it is hot.
In the bowl of a KitchenAid stand mixer, combine 8 egg yolks and 1 cup of sugar. Using the wire whip attachment, blend together on speed 2 for 30 seconds, or until blended and thick.
While still mixing on speed 2, slowly add half-and-half to the egg mixture. Mix until the batter is well-combined, and then return it to the saucepan. Carefully heat the mixture over medium heat until small bubbles appear on the sides of the pan and steam rises, but do not boil it. Stir constantly.
Pour the mixture into a large bowl, and stir in 2 1/2 cups of whipping cream, 4 teaspoons of vanilla and 1/8 teaspoon of salt. Cover the bowl, and refrigerate for eight hours or more. Attach the ice cream maker attachment to the stand mixer. This attachment includes a paddle and a freezer bowl to complete the ice cream.
Pour the chilled mixture into the freezer bowl. Turn the mixer to speed 1, and mix for 15 to 20 minutes or until the ice cream reaches the desired consistency. Serve or freeze immediately.
