Emeril Lagasse offers a good recipe for oven baked crispy fries. The recipe requires cutting a baking potato into 1/2 inch thick slices and tossing the potato slices in Emeril's ESSENCE Creole Seasoning mixed with an egg white. The potatoes are then baked for 30 minutes at 425 degrees Fahrenheit.
Select two large baking potatoes with a combined weight of approximately 1 1/2 pounds. Scrub the potatoes thoroughly before slicing them into 1/2-inch-thick fries. Prepare the egg white by whisking it in a medium bowl until it begins to foam.
To create the seasoning for the potatoes, mix 2 tablespoons of salt and garlic powder with 2 1/2 tablespoons of paprika. Add 1 tablespoon each of black pepper, onion powder, cayenne pepper, dried oregano and dried thyme. Blend the spices into the egg white, and toss the fries into the mixture until coated.
Place the fries on a greased, non-stick baking sheet in an oven that has been preheated to 425 degrees, spacing them so that they are not touching. Turn the potatoes with a spatula after 15 minutes has elapsed. After 30 minutes, remove the fries from the oven, and place them on a serving dish. Eat the fries while they are still warm.
