Brown a 3-pound, trimmed, boneless chuck roast on all sides in the hot oil. Next, season the meat with a pinch of seasoned salt, a pinch of onion powder and ground black pepper to taste. Add in one 14.5-ounce can of beef broth, 1 1/2 tablespoons of Worcestershire sauce and 1 quartered onion.
Seal the lid, and bring the cooker to full pressure. Reduce the heat to low, maintaining full pressure, and cook for 30 minutes. Meanwhile, peel and cut 4 carrots and 4 large potatoes into bite-size pieces. Using the quick-release method, lower the pressure, and add in the carrots and potatoes. Bring the cooker back to full pressure, and cook for an additional 15 minutes. Lower the pressure again using the same quick-release method, and transfer all the contents to a serving dish.
