To make this easy pressure cooker pot roast recipe, heat 2 tablespoons of vegetable oil in the cooker over medium-high heat. Brown a 3-pound, trimmed, boneless chuck roast on all sides in the hot oil. Next, season the meat with a pinch of seasoned salt, a pinch of onion powder and ground black pepper to taste. Add in one 14.5-ounce can of beef broth, 1 1/2 tablespoons of Worcestershire sauce and 1 quartered onion.
Seal the lid, and bring the cooker to full pressure. Reduce the heat to low, maintaining full pressure, and cook for 30 minutes. Meanwhile, peel and cut 4 carrots and 4 large potatoes into bite-size pieces. Using the quick-release method, lower the pressure, and add in the carrots and potatoes. Bring the cooker back to full pressure, and cook for an additional 15 minutes.
