A proofing oven is a standard oven that has a special setting that allows bread and other baked goods to rise in a warm location. Most proof-mode settings keep the oven between 85 and 110 degrees Fahrenheit, which promotes rising without killing the yeast.
Ovens that are already hot must be allowed to cool before the proofing process begins. Once the proofing starts, the oven door should stay closed for the recommended time. Some oven models require placing a pan of hot water beneath the bread while it rises. Covering the dough with a damp towel or shortening-coated wax paper keeps the dough clean and promotes rising.
