Stoves with induction elements utilize the most energy-efficient stovetop cooking technology available as of 2015, often using as little as 100 watts of energy for tasks such as simmering. Their efficiency is due to the induction technology's ability to convert up to 90 percent of input electricity into useful heat.
Traditional electric stovetop elements and gas burners are unable to match the efficiency of induction elements. In comparison to the 90 percent efficiency of induction elements, standard electric elements only convert 65 percent of input energy into cooking heat. Gas burners are even less efficient, with only 55 percent efficiency.
