Snacks to serve at a luau party include grilled shrimp skewers, mini Hawaiian sandwiches and Surfin' Nacho Boards, which are fruity nachos. These snacks are light and have a lot of fruity light flavors that go well with a tropical island themed luau.
The fruity grilled shrimp skewers only take about six minutes to cook and have just a few ingredients. It's great for something fast and can easily be made up just before the party so that they are still warm. To make the skewers, cooks will need shrimp, pineapple, mangoes, garlic and limes. These get brushed with olive oil once they are on the skewers and then grilled on each side.
Mini Hawaiian sandwiches are fun one-handed snacks, making them a perfect party snack. This is also a great recipe for left over chicken. The simple sandwiches call for chopped rotisserie chicken, macadamia nuts, canned lychees, red grapes and mayonnaise. This all gets blended in a bowl and served on miniature cocktail rolls.
Surfin' Nacho Boards are easy to make. To make these nachos, cooks need peaches, jalapenos, red onion, cilantro, lime juice, tortilla chips, shredded coconut, shrimp and Monterey jack cheese. Everything but the shrimp and Monterey jack cheese is mixed into a salsa and put on the chips, which are baked in the oven. Then they are topped with the cheese, put back in the oven to melt and then topped with the coarsely chopped shrimp.
