Some good cold finger foods for parties are tomato and mozzarella bites and shrimp cocktail, which is cold fresh shrimp served with cocktail sauce. Another cold finger food to serve is watermelon squares topped with feta cheese.
To prepare tomato and mozzarella bites, use decorative toothpicks to spear one cherry tomato and one round ball of mozzarella cheese. You can also add a folded basil leaf to each one, and drizzle balsamic vinegar over them on the serving platter.
To make shrimp cocktail, fill a large pot with water, and squeeze juice from 1 lemon cut in half. Add the lemon halves, 1 onion cut into quarters, 1 bay leaf and a handful of black peppercorns to the pot. Bring to a boil, then reduce the heat to a simmer for five minutes. Add 2 pounds of large or jumbo uncooked shrimp, and cook for two to three minutes, until the shrimp are fully opaque. Drain, and place the shrimp in a bowl of ice water to stop the cooking process. Peel and de-vein the shrimp, and arrange them on a platter of ice. Serve with a bowl of cocktail sauce. You can also purchase pre-cooked, flash-frozen shrimp for shrimp cocktail.
To make watermelon and feta cheese bites, cut watermelon flesh and feta cheese into 1-inch size cubes. Lay the feta cheese cubes on top of the watermelon cubes, and spear them together with decorative toothpicks. Sprinkle the slices with chopped fresh mint, and drizzle with olive oil, balsamic vinegar, sea salt and pepper.
