Some recipes recommended for a New Year's Eve celebration are Champagne Truffles, Lamb Meatball Sliders and Chili-Roasted Black Eyed Peas. The latter of these is especially popular as a Southern New Year's Eve party food.
To make Chili-Roasted Black Eyed Peas, combine two cans of rinsed and drained black-eyed peas with olive oil, chili powder, pepper, ground cumin and salt in a bowl. Once thoroughly mixed together, spread in a jelly-roll pan and bake for up to 50 minutes until dry and crispy, stirring every 10 minutes or so. Allow to cool for at least 20 minutes before serving as a party snack.
For Lamb Meatball Sliders, saute onion and garlic, then add coriander, fennel seeds and rosemary to toast. Make marble-sized balls out of goat cheese and set aside, then combine spicy lamb sausage meat with ground lamb, breadcrumbs, eggs and salt and make larger balls. Insert a goat cheese marble into each and seal the hole. Refrigerate while thickening a sauce of sauteed onion, simmered with tomatoes, red pepper flakes, salt, sugar and oregano. Add the meatballs to the sauce and continue to simmer. Serve on rolls filled with pickled cucumbers and a spread of beaten goat cheese, mascarpone, milk, oregano, rosemary, thyme, dill, salt and pepper.
To make Champagne Truffles, combine hot whipping cream with chopped chocolate, champagne and hazelnut liqueur, then chill. When set, use an ice cream scoop to form little balls and roll each in coarse sugar. Refrigerate for another half hour before serving.
