Party-perfect meatballs can be made in advance, reheated and kept warm in a Dutch oven or slow cooker. To make them, pulse chopped red onions, pitted kalamata olives, fresh mint leaves, parsley and lemon zest in a food processor. Pour into a bowl and stir in Japanese breadcrumbs, two large eggs, ground beef and ricotta cheese. Shape the mixture into bite-sized balls, and place in a baking dish. Brush the meatballs with a tomato paste mixture, and bake at 450 degrees Fahrenheit for about 12 minutes. To serve, skewer each meatball with a toothpick.
To make spicy white cheese dip, combine one small diced onion, diced tomatoes and two garlic cloves in a slow cooker. Add milk, ground cumin and black pepper to taste. Add 2 pounds of white American cheese cut into chunks. Cover and cook on the lowest setting for three hours to prevent the bottom of the dip from burning.
