To make a cranberry sauce using port and tangerine, combine 12 ounces of fresh or frozen cranberries with 3/4 cup of sugar and 1/2 cup of ruby port in a pot. Add 1 1/2 inches of tangerine peel, and simmer over medium heat. Stir until the sugar is dissolved. Gently boil for approximately 12 minutes or until the cranberries burst. Remove from heat, and add 1/3 cup of tangerine juice. Cool the mixture before serving.
To make an alcohol-infused eggnog, beat 4 egg yolks until their color lightens. Slowly add 1/3 cup of sugar, and continue beating until the sugar dissolves. Pour in 1 pint of whole milk, 1 cup of heavy cream, 3 ounces of bourbon and 1 teaspoon of freshly grated nutmeg, and mix until the ingredients are combined.
Beat the egg whites to soft peaks. Slowly add 1 tablespoon of sugar, and beat until stiff peaks develop. Whisk into the other mixture, and chill before serving. Variations of eggnog include cooked versions and non-alcoholic versions.Learn more about Christmas
