To make the pumpkin cheeseball, use a mixer to blend 16 ounces of cream cheese, 1 1/2 cups of shredded cheddar, 2 tablespoons of salsa, 3 tablespoons of minced onion, 1 teaspoon of minced jalapeno and 2 teaspoons of ground cumin. Scoop the mixture into plastic wrap and form it into a pumpkin shape, and then chill it for about two hours. Before serving, roll the ball in crushed orange tortilla chips and add a bell pepper stem at the top. Serve with tortilla chips.
To make Halloween popcorn treats, spray a large mixing bowl and baking sheet with cooking spray, and set aside. In a large pan, heat 3 tablespoons of olive oil and 1/3 cup of popcorn kernels over medium-high heat. Cover the pan, shake gently and cook for about three minutes until the kernels pop, and then place them in the bowl.
In a medium pan, heat 3 tablespoons of butter and add 1 teaspoon of vanilla and 6 cups of mini-marshmallows. Stir until the mixture is smooth, which takes about five minutes. Pour the marshmallow over the popcorn and use a spatula with cooking spray to stir until coating all of the popcorn. Spread the mix onto the baking sheet and sprinkle with chopped candy bar pieces, almonds, cookies and chocolate candies. Allow the treat to dry for about one hour before breaking it into pieces and storing.
