Some easy Christmas desserts include funfetti shortbread bites, gingerbread cheesecake dip and three-ingredient buttery shortbread cookies. To make gingerbread cheesecake dip, cream 1 8-ounce of softened cream cheese, and then mix in 1/4 cup each of brown sugar and sifted powdered sugar and 3 tablespoons of molasses. Season the mixture with 1 teaspoon each of ground ginger and ground cinnamon, 1 dash of nutmeg and 1 1/2 cups of whipped cream. Serve the dip chilled with graham crackers.
To make funfetti shortbread bites, combine 1 cup of cold unsalted butter and 2/3 cup granulated sugar, and stir in 1/2 teaspoon of almond extract and 2 1/4 cups of all-purpose flour. Stir in 2 1/2 tablespoons of nonpareils sprinkles. Spread the dough into a buttered and parchment paper-lined tray, and chill the dough for 30 minutes before cutting it into small squares baking it at 350 degrees Fahrenheit for eight to 12 minutes.
To make three-ingredient buttery shortbread cookies, cream together 2 cups of cold salted butter and 1 cup of packed light brown sugar and then mix in 3 1/2 cup of flour. Knead another 1/2 cup of flour into the dough, and wrap it in plastic wrap. After refrigerating it for 30 minutes, roll the dough out, and cut out cookie shapes. Bake the cookies at 325 F for 15 to 20 minutes.
