Skim syrup is stirred into the mixture, and the mixture is then put in a jar and covered tightly with a cloth. The mixture is skimmed each morning for 10 mornings. After 10 days, the mixture is uncovered and sits until fermentation stops.

To make strawberry wine, 7 pounds of mashed strawberries are boiled with the juice of one lemon. The mixture is removed from heat, covered with a cloth and sits for one week while being stirred daily. After one week, the mixture is strained with a double layer of cheese cloth, and the juice is mixed with 5 pounds of sugar. The juice must sit for another week, and after the second week, pour it into a glass bottle and let it sit for three months or until fermentation stops.
