Many different types of wines can be made at home, such as blackberry and strawberry wine. The process takes at least 10 or more days since the fruits used in wine need time to ferment.
For blackberry wine, 7 quarts of mashed blackberries, 6 quarts of water, 7 pounds of granulated sugar, and one egg white are needed. The blackberries and 3 1/2 quarts of water are combined in a large steel pot, covered and left to sit for 24 hours. After 24 hours, the egg white, sugar and additional 2 1/2 quarts of water are added, and the mixture is boiled for 5 minutes. Skim syrup is stirred into the mixture, and the mixture is then put in a jar and covered tightly with a cloth. The mixture is skimmed each morning for 10 mornings. After 10 days, the mixture is uncovered and sits until fermentation stops.
To make strawberry wine, 7 pounds of mashed strawberries are boiled with the juice of one lemon. The mixture is removed from heat, covered with a cloth and sits for one week while being stirred daily. After one week, the mixture is strained with a double layer of cheese cloth, and the juice is mixed with 5 pounds of sugar. The juice must sit for another week, and after the second week, pour it into a glass bottle and let it sit for three months or until fermentation stops.
