A lobster goes into the water black and comes out red. The most common types of lobster that are cooked are the Homarus americanus and Homarus gammarus. These are cold-water lobsters that live on both sides of the Atlantic ocean.

Lobsters are 10-legged crustaceans that are bottom dwelling and closely related to shrimp. They are found in all of the worlds' oceans as well as in freshwater environments. Their lack of eyesight is compensated for by a highly developed sense of smell and taste. They eat fish, mollusks, algae,

other plant life and occasionally other lobsters. As of 2014, lobster populations in Europe are declining due to overfishing.
