Green leafy vegetables, red-hued vegetables, white vegetables and purple vegetables are a few types of veggies that are low in carbohydrates. According to SFGate, these non-starchy vegetables are also low in calories and can assist the weight loss process.
Low-carb green leafy vegetables include kale, spinach, broccoli, collard greens, arugula and watercress. These vegetables are rich in fiber, a slow-digesting substance that creates a feeling of fullness. Vegetables on the red side of the color spectrum include red onions, tomatoes, pumpkin and squash. A 5.3-ounce serving of tomatoes has just 5 grams of carbohydrates according to SFGate. Garlic, onions, turnips, cauliflower and scallions are a few low-carb white vegetables, and eggplant is a non-starchy purple vegetable which has just 5.88 grams of carbohydrates for every 100-gram serving.
According to the Harvard School of Public Health, the amount of carbs eaten is not nearly as important as the type of carbohydrate, with the worst being refined sources such as white bread, pasta and pastries. These types of carbs can contribute to weight gain and promote diabetes. Healthy carbohydrates include whole grains and vegetables that deliver high amounts of fiber and nutrients. Most vegetables are low in unhealthy carbs, with the exception of potatoes. The Harvard School of Public Health states that potatoes have been found to encourage weight gain and recommends replacing them with beans and other legumes.
