To make the Vegetarian Chickpea sandwich, combine a 19-ounce can of drained, rinsed and mashed chickpeas with 1 stalk of finely chopped celery and 1/2 an onion, also finely chopped. Combine 1 tablespoon of Vegenaise or other vegan mayo, 1 tablespoon lemon juice, 1 teaspoon dried dill weed and salt and pepper to taste. Mix the chickpeas, celery and onion with the dressing and spread over your favorite artisan bread, crusty rolls or spoon into a pita. Serve with lettuce and tomato. Any chopped, raw veggies (cucumbers or peppers, for example) can be substituted for the celery.
To make the Vegan Reuben, heat 1 tablespoon of olive oil in a skillet. Spread 1 or 2 tablespoons of Vegenaise and Sriracha sauce to taste on 2 slices of rye bread. Bake up some sliced tofu and layer 2 pieces of it onto the rye bread. Add 1/2 of a Haas avocado, sliced, and plenty of sauerkraut. Sear the sandwich in the skillet, taking care while flipping not to let it fall apart. Another delicious option is pressing it into a panini grill.Learn more about Nutrition & Diets
