To make tomato and leek frittata, saute 2 cups of chopped leeks in 2 teaspoons of olive oil in an ovenproof skillet until softened. Reduce heat. Whisk together 8 large eggs, ¼ cup fat-free milk, a pinch of salt and a pinch of pepper. Stir in ½ cup shredded white cheddar cheese. Pour over sauteed leeks, and arrange tomato slices on top. Cook until sides are set, then transfer skillet to a 350 degree oven, and bake for 10 minutes. Cut into wedges, garnish with thyme, and serve.
To make South Beach-style crab and avocado salad, combine 2 tablespoons light mayonnaise, 1 tablespoon fresh lime juice, 1 tablespoon chopped roasted red pepper and a pinch of cayenne. Mix in 1 pound cooked crab meat, and season with salt and pepper. Peel and cube 1 large avocado, cut into 1/4-inch cubes and fold into salad.
