Avocado Egg Bake with Jennie-O Turkey Bacon and Heavenly Angel Hair Pesto are two recipes from the show "The Biggest Loser." The first recipe makes two servings and the second makes one serving.
To make Avocado Egg Bake with Jennie-O Turkey Bacon, heat the oven to 425 degrees Fahrenheit. Cut one avocado in half and pit it. Scoop each half of avocado out, then shave off a small amount of the avocado bottoms so they sit flat on a plate. Set these halves in separate compartments on a muffin plate, with the scooped sides facing up. Place 2 egg whites in each half and bake for 15 minutes or until the whites are set.
Meanwhile, cook 2 turkey bacon slices, then cut them into pieces. Once the avocados are removed from the oven, top them with 1/2 a cup of salsa, the turkey bacon pieces and season with salt and pepper.
For the Heavenly Angel Hair Pesto, rinse, drain and pat dry 1 package of House Foods tofu shirataki angel hair. Next, heat the noodles in a microwave for one minute. Drain any excess liquid, then cut the noodles. Use a processor to blend 1 bunch of basil leaves, 1 tablespoon of pine nuts, 1 tablespoon of olive oil, 1 teaspoon of minced garlic and 1 tablespoon of Parmigiano Reggiano. Season with salt and pepper to taste. Lastly, combine the noodles and pesto sauce in a pan over medium-high heat for a couple of minutes.
